The 16 Best Bars in Chicago Right Now
“For a casual French wine bistro and bar option, head to Bar Parisette in Logan Square. Owner and wine director Matt Sussman of Table, Donkey and Stick brings a rotating list of mostly $16 cocktails, some discounted even more (alongside wine) during happy hour. Sussman, a sommelier, has curated an extensive wine list of predominantly French selections, including grower Champagnes and an array of skin-contact wines. Head chef Madalyn Durrant (formerly of Webster’s Wine Bar) focuses on seafood- and vegetable-friendly dishes. - Kristin Braswell

An extensive list of small and cult French and French-inspired winemakers at shockingly low markups has drawn crowds to Bar Parisette since it opened in the summer of 2024. The seasonal bistro menu— celery salad with comté cheese, sour cherry, walnuts and mint; roast chicken over wine-braised leeks with mustard and fresh herbs—keeps them coming back. - Nils Bernstein
Bar Parisette Explores Modern French Cooking
“French bistro cuisine is not so much about a regionality, as it is about an ethos. It’s affordable, it’s simple, it’s well prepared and it’s technique driven,” she explains. “The more modern bistros in Paris are having a moment that new American cuisine had a while back and are incorporating a lot of flavors from around the world.” Put another way; “We aren’t intending to reflect the American stereotype of bistro food, but more what is currently being produced in the bistros of France.” So you’ll still see some classics like steak frites and moules frites, but rather than a never-changing menu of classics, expect a much more dynamic list of dishes that reflect the seasons. As owner and sommelier Matthew Sussman puts it, “We don’t have French onion soup on the menu, because there’s no point in eating it in July!” - Anthony Todd
